Mock Tuna Salad

Raw mock tuna salad made with soaked almonds and sunflower seeds. Mock tuna is perfect inside a lettuce leaf or top a bed of lettuce greens.

Another one of my favorite raw recipes. In the past, on my SAD diet, I was not much of a meat or fish fan. Although I did love a tuna sandwich once in a while. Since going vegan back in 1996 until 2008 I had not had a good vegan or raw mock tuna.

After creating raw mock tuna salad, I have satisfied my tuna sandwich craving. I love to roll some mock tuna in a collard green with sliced tomato, sliced cucumber and mock ranch dressing. I call it Dancin' Toon-A because I dance around and sing the YUMMY song when I eat it, I LOVE IT!


Raw Mock Tuna Recipe

Dancin' Toon-A (mock tuna)
  • 1 cup soaked Almonds (24 hours min, I love to peel them by pushing them in between my fingers and pinching them the skin with come off, you do not need to do this step)
  • 1/2 cup soaked (around 5 hours) and Sunflower Seeds (if you like you can dry them on a plate for an afternoon).
  • 1 lemon juiced
  • 1 Tablespoon sweetener like Agave Nectar, dates, etc
  • 2 garlic cloves, crushed
  • 1/4 cup parsley, chopped finely
  • 1/2 bell pepper (yellow or red), chopped finely
  • 3 stalks celery, chopped in tiny pieces
  • 4 green onions, chopped finely
  • 1/2 apple, chopped finely
  • 1/2 lemon-dill cucumbers, chopped finely (SEE RECIPE BELOW)
  • 1/8 tea white or black pepper
  • 1/4-1/2 teaspoon dulse
  • 1/2 tea dill dried or 1/8 cup finely chopped fresh dill
  • In a food processor add 1/2 the nuts and seeds and blend well with dulse, lemon juice, garlic, sweetener and seasonings. Add the rest of the nuts and seeds to the mix and pulse chop leave a bit of chunks put in a bowl and mix in the veggies. Taste and adjust to your taste remembering Sweet, Sour, Spicy, Salty, Bitter.
    Put in a lettuce leaf then add a tomato slice, lemon-dill cucumber, sprouts, etc and ENJOY! I love these sandwiches!! This is a fun raw vegan recipe to take to an office luncheon, wait until they have enjoyed the Toona then tell them its made with nuts.



Lemon-Pickled Cucumbers

  • 1 cucumber, chopped/sliced
  • 1 lemon, juiced
  • 1 garlic clove, crushed
  • 1 tablespoon dill
  • 1 teaspoon peppercorns
  • water to fill Soak with piece of dulse or teaspoon of salt. The longer you soak the cucumbers the more they turn into pickles.
