Marinated Vegetables
Marinated vegetables for any fresh meal time, pasta or raw pizza. No need for cooking, just marinate and enjoy.
Marinate broccoli, cauliflower, Brussels sprouts, mushrooms, or even Asparagus, in a bit of:
olive oil around 2-3 tablespoons
salt about 1/2 to 1 teaspoon
lemon juice just a touch no more than 1 tablespoon
(optional) fresh ground pepper
I like to add a touch of honey or Agave nectar for a light sweet flavor, about 1 teaspoon I just put veggies in a bowl pour on marinating ingredients and toss, then taste for adjustment.
There is no exact science for marinating, just adjust to your taste sensation. The salt, and lemon juice work to soften the vegetables creating the marinate effect. The rest of the ingredients add flavor to the vegetables.
Summer Time Marinating Tip
Another fresh tip for marinating vegetables in the summer time is utilizing the heat of the sun.
Marinate the veggies
then place in a glass container
cover with parchment paper or plastic wrap (making sure it is not touching the vegetables)
poke a few holes in the top
place in the sun for 3 to 5 hours
Sun baked, still fresh marinated veggies.
Raw Pizza Vegetable Recipes
Combination Vegetables
1/2 sweet onion sliced thinly
1 red pepper sliced thinly
(optional)5 mushrooms, sliced thinly
1 head broccoli, chopped into small pieces
1/2 head cauliflower, chopped into small pieces
Toss together with a bit of olive oil, sea salt, 1 tablespoon lemon juice and 1 crushed garlic clove.

2 Large Portobella mushrooms or 1 pack of small Portobella mushrooms
